Rob shares his Christmas dinner tips with BBC Radio Kent

Rob Kirby, Author and Chef Director at Lexington Catering, was interviewed by Dominic King on BBC Radio Kent. He talked about the phenomenal Lexy team who serve over 21,000 covers a day, what it takes to work as a chef and front of house, and just how crazy this time of year is for the hospitality industry.

Rob and Dominic talked about the importance of family and do’s and don’ts at Christmas. Rob says, “A sprout is for life not just for Christmas.” Debatable perhaps – Dominic King is certainly not a fan!

Rob shared a few tips for your big Christmas roast…

– Buy a turkey that fits in your oven!

– Cook your stuffing separately, don’t worry about putting it into the turkey.

– Use a cooking temperature probe – 65 degrees and your turkey is ready.

– Veggies – anything you blanch you can cook early doors. Season with salt and pepper and leave to one side until dinner is ready.

Rob also talked about what’s ahead from a food perspective in 2020. He said, “It’s an exciting time. People love food and restaurants are busy – we’ve got some great restaurants in Kent and I think it is going to be a fantastic year.”
