May is already upon us and what a great month for fresh produce it is! With asparagus, whole crab, leafy lettuce and Jersey Royals there’s plenty to choose from to make a fantastic spring dish.
Look out for the early English strawberries which should be coming through at the end of the month. What a bonanza May is! It’s one of my favourite times of the year for sure. The great British institution that is the Chelsea Flower Show is on the horizon and the gardens start to awaken to life and take shape.
I have been busy with my food team looking at various innovations and training for a new look deli and salad bar. We’re featuring some great healthy alternatives, such as the ever so trendy tacos and poke bowls which seem to be swamping the high street. The food team showcased these new dishes at our quarterly food forum, which over 140 managers, chefs and staff members attended. It was amazing to see so many staff members engaged in our developing food offer.
My food advice for the month – stay close to the asparagus which is beautiful this year. It is best left on its own, cooked to the bite with clarified butter, rock salt and cracked black pepper. What a great way to celebrate the season!
