Mad as a March hare…

Hello March!

Hopefully we’ve seen last of the snow and spring is finally around the corner!

As I write this our chefs are busy practising for Hotelympia with our strongest entries yet. I’m sure you’ll be with me in wishing my chefs the best of luck in competing in one of the biggest cooking competitions that is held in London – I’ll let you know how we get on in my April blog.

This month will see the start of the Jersey new potatoes popping up! You’ll need an overdraft to buy them in the first few weeks but have no fear they’ll soon come down in cost as the season moves on.

One of my favourite all time dishes is to part boil, then roast them in the oven with mint and thyme and serve warm in a bowl with white and brown crab meat and a teaspoon of salted caramel! Trust me this combo is to die for and came about by chance but is now one of my signature dinner party starter blockbusters!

Whilst it’s still chilly enjoy the last of the low and slow cooked stews with all the wonderful British root vegetables either left exactly how they were born or mashed up with lots of salted butter and cracked black pepper, mmmmm pass the bottle of Barolo please!

Can’t wait to report back on our Chefs results at Hotelympia, hopefully it will be the best year ever for Lex getting in the medals!
