Here comes spring, it’s on its way!
Where can I start? We’ve had an amazing week so far at London’s Hotelympia, with each and every Lexington chef competing and winning a medal – just Wow!
Yesterday, Wednesday 2nd March was the launch of our Apprentice Scholarship and partnership with the lovely Galvin brothers. The day kicked off with a live cooking competition over ten stations at the London Excel. All 10 apprentices hit the grade and we took home two bronze medals, six silver medals and two terrific golds! Well done to our apprentices and what a great boost for their careers.
Now to the food seasons: watch out for British asparagus, we are currently very early in the season however it is worth waiting a month, as the produce will be better eating and prices will fall.
My cream of the crop during March are Jersey Royals. They are currently beautiful, amazing and real diamonds in the rough. Try them partly boiled then roasted with a little butter, rock salt and fresh thyme, then place in a bowl as a starter with some white and brown handpicked crabmeat on top and finish with a small spoon of salted caramel – sublime! I promise it will be the maddest one I ever give you…. but try it to believe it!
