Hello April, spring is finally in the air!
First things first, the Lexington culinary babes pulled off a whitewash at Hotelympia, with every Chef competing winning medals and best in class all round, our best year on record!
It was a real team effort, headed up by Danny Leung who was recognised by the international judges in the judge’s choice award for all his commitment, bringing on the team and supporting them in every way.
It’s time to start looking out for Asparagus and the official date is St. Georges Day, but I have already seen some British spears coming in. They’re just waiting to be cooked and draped in hollandaise sauce or just brushed with butter and salt and pepper.
Spring lamb is at its best and we had our butcher Western Wright come along to our last Chefs forum, he gave us a butchery demonstration and taught our Chefs about alternative cuts, which are seeing their way onto the restaurant scene as I write!
We have worked on our new Blend range and this will be hitting our sites over the next month, supported by some Chef training.
I’m so happy to be writing this blog as we sail into my favourite season, Spring is here at long last!
