Lexington shortlisted for Waste2Zero Award 2019

Lexington Catering, one of London’s leading contract caterers, has been shortlisted for the Waste2Zero Awards, which are run by Footprint.

The Waste2Zero Awards are designed to give the foodservice and out of home sector a platform for recognition and to showcase best practice and leadership. The ultimate aim is to encourage people to take the issue of waste more seriously.

Waste2Zero talk about the fact aaste remains a mega-trend and one of the biggest challenges to the foodservice and hospitality industry. Food waste, in particular, has emerged as one of the defining sustainability issues of our modern food system, whilst packaging presents a perpetual and colossal problem.

In foodservice 920,000 tonnes of food is wasted every year, of which a staggering 75% is avoidable. 30% – 50% of food produced never reaches the human stomach. Simultaneously 1.3 million tonnes of packaging and 0.66 million tonnes of other non-food wastes are also discarded.

Lexington has not only introduced various technology solutions but the food team also launch TRASHED, a new food brand. This focuses on creating delicious dishes, utilising sustainable breeds and cuts of underused meats and vegetables that generally end up being thrown away.

TRASHED was launched at Lexington’s annual chef competition, Lex Chef, in November 2018. It then started to be rolled out across client sites in February 2019 to raise awareness around food waste.
